Sourdough Pizza - Instructions

Storage:

Store the pizza sourdough in the fridge. Prolong periods of warmth will cause the dough to over proof and fall apart. If you are not planning to use it within the first few days of purchase, the dough can be frozen. 

Preheat the oven:

The hotter your oven the better, preferably minimum of 240C.  Preheat your oven for at least 30 minutes. If you have a pizza stone or a steel all the better and preheat that also.  If your oven doesn't get hot enough consider cooking the pizza base for 5-10 mins with just sauce before applying toppings. Good results have also been obtained using a BBQ.

Shape the dough:

Shape the pizza dough straight out of the fridge. If the dough is wet and sticky out of the bag, dust the dough and the working surface with some flour.

Either shape the dough into a pizza base with your hands or roll with a rolling pin to your liking. 

Toppings:

Too many toppings may make it difficult for the pizza to cook. With any good pizza, less is more.
